peel onions, cut them into pieces and put them in the curry. they will absorb salt to some extent.

compensate the taste with pepper, or chilli or something, salt is not the easiest thing to cover up!

How long do I have to leave the potatoes in to absorb salt?

yes potatoes will help, and other vegetables to a lesser extent; peas or sweet bell peppers could help too.
