Peach Tart
Okay all, you are going to have to wait until tomorrow for the picture and I’m sure some of the directions will make more sense then. This is one of my simplest recipes, peaches are my absolute favorite fruit. Everyone loves the sweet peaches and paired with some vanilla or cinnamon ice cream, it’s a simple dessert you can whip up anytime.
Start with 4 large peaches. In the store you can tell when the fruit is ripe by smelling it, peaches will smell like peaches when they are ripe. Also while you are at the store you can buy some of that premade piecrust. They usually come in packs of twos. I only use one for this recipe because I arrange the peaches in a certain way, but that will come later.
-First slice the peaches in half and pull out the pit. Then take each half and slice it thinly into wedges using the pit…uh hole? as your marking point. It gets time consuming but it will all be worth it. Don’t worry if some are thicker than others or if you mess up and they are weirdly shaped you will still use them.
-Gather up some ground cinnamon, honey, vanilla, brown sugar, sugar, lemon juice, lime juice and nutmeg. 2 Tablespoons of each ingredient except for the sugar you want 1/2 cup of each. put this all in the same bowl as the peaches. Gently mix together making sure to cover each slice in the marinade. let this set for around 15 to 20 min.
-Preheat the oven to 375 degrees. Now using a simple pie pan roll out the dough you bought at the market. Make sure it fits the pan and just pinch the excess on the top between your thumb and first finger. Making the edge look fluted. Then leaving the peaches in their delicious juice, arrange the peaches in a circle, start with the outside and place the slices skin up one on the middle of the other, and keep layering in a circle until you reach the center. Then go back with the peices that have either broke or were misshapen and fill in any areas that are sparse. Pour the rest of the juice over and bake until the pie is bubbly.
Serve with some ice cream and sprinkle with cinnamon.
