I have read it has something to do with exposure to oxygen. While the taste is only slightly affected, I wonder if it affects the level of antioxidant, cancer fighter properties in the tea when it goes brown? perhap the process of going from green to brown is the chemical reaction that is good for the body? If you hear anything further let me know. The high grade, japanese green tea I pour from my japanese teapot into my thermos always goes brown.
