I think its mainly for the flavouring it gives…
There are alot of foods that are singed to give it an interesting flavour…

Setting light to the brandy
When you set light to the brandy - or your favourite tipple - that is poured over the pudding, the flame is said to represent Christ’s passion, while a decorative sprig of holly is a reminder of His ‘Crown of Thorns’

I actually did think it was because of the flavour…
