The running water is constantly eroding the soft rock underneath so it cuts into the earth and over (alot) of time it gradually gets deeper and deeper and forms a V shaped valley… or something like that.

I assume you ask why V and not jus vertical slopes? well generally the slow erosion process also means that the sides erode and its slopes become less steep. THe are valleys that have vertical faces because the valley walls are made of a rock that is very hard to erode.
