MERINGUE COOKIE S.O.S!

Okay guys, here’s one for the culinary “experts”

I made meringues, they came out fine whipping wise, and tasted fine as well. My only problem being there is an air pocket in the center of the cookies. Why could this be happening?

I believe the recipe I called for asked for 2 egg whites, 3/4 cup fine sugar, and some vanilla extract.

I had piped the cookies onto a parchment sheet and then I shoved them in the oven and *turned the oven off*

Oven was 350.

Can someone tell me what could be making the meringue cookies hollow inside?

did you pre-heat the oven for long enough ?

I did, my oven preheats for about 20 minutes or so.

Were the eggs room temperature ?Meringues can be tricky that site may help you there is several recipes there if yu poke around, also they say glass bowel not plastic, they are a bit temperamental lol

Yeah, they whip up fine, they are perfect consistancy, but once they go in the oven something happens that makes them come out with the middle completely hollow.

Hmm odd that is, read the site hon, maybe there will be some tips there to help you :-) you didn’t have a smigen of egg yolk in there did you ? that will also have an effect.

That was the site I had used I believe (or one of them I researched anyway) and it’s not the meringue itself, it’s the fact when I bake it the middle gets hollow…

The cookies are great tasting and whipped perfectly. I used a piping bag and they held the design of the ridges the piping bag gave… so they are thick.

I just can’t understand why the middles end up hollow. I almost wonder if the oven might be too hot at 350. I know you need to just dry them out… not really COOK them…

I thought the weather/humidity is only an issue if the meringues won’t dry…?

Mine -are- dry, but hollow… is the weather/humidity to blame for them being hollow? I was almost wondering if it was the temperature of my oven…
