Hard-Boiled Egg Problems!

…For years, I used to be able to make and peel them with no problem at all, but lately they’ve become extremely difficult to peel! That slippery membrane that usually aids in easily peeling off the shell is non-existent these days, and I end up peeling off a pretty thick layer of the egg along with the shell! Where have I started going wrong here???

For fear of a raw yolk, I end up cooking them longer than one probably should, and then drain and place them into cold water until they’re cool enough to peel. Is anything here wrong? Please explain why so I can make sure not to repeat the same problem!

Thanks so much! I swear, it’s pretty weird when you can cook anything except a simple hard-boiled egg!! Humiliation!!! ;) Any help would be very much appreciated!!!

I believe if you cook them too long that slippery membrane deteriorates. Another tip is to crack the egg a little before you place it in the cold water to cool.

do not cool it in cold water. allow the water too cool naturally, cover the pot, turn off the heat. suaully works for me, dont know why.

Thank you both!…By the way, what would you say is the ideal time for boiling 6 eggs in a medium sized, heavy pot?

I have never had any problems peeling my hard boiled eggs. I allow water in a pan, enough to cover the eggs, to come to a boil. Then remove from the heat. Allow to sit with a lid over them for 10min. Drain, and immediately fill pan with very cold water, let sit for 2min. drain, and the shells will come off easily. If you allow them to cool too much, this will make it more difficult to peel. Be sure to always start them in cold water. Tap each end lightly and all around, then roll gently in your hands before peeling.

same time as one egg, as long as theyre all at the same depth. just cover the eggs in water, and when the water starts to boil, cover the pot, and turn off the heat. when its cool enough you can eat it. 9/10 times the shell will just slide off. . . sometimes still it wont, but not very often.
