The restaurant game is no fun unless you love it (been there).

My greatest surprise was how little the quality of the product mattered to the success of the venture. What did matter was:

- Lots of start-up money. Most places don’t make a profit for a couple of years so you need to prepare for that.
- Solid business plan by someone who knows what they’re doing. This is why restaurant partnerships are so common.
- Nothing trumps location. Nothing.

If it’s your dream follow it with all you have. But be sure to do so with your eyes open.
