there are some really nice ones along the bondi beach route, or depending on how far you want to travel you could try somewhere up in the blue mountains-Jenolan caves is a pretty epicly awesome place with a hotel built right into the valley cliff face, or Katoomba is nice as well.

hmm, ive only stayed at backpackers really in the city….although the central YHA, not the train station one, the other one, has luxery rooms you can book, with a rooftop pool and epic views over the entire city
