What ions form when water dissociates:
H20 –> OH- + H+ (Although remember that H+ are not just floating around, it would have bonded to lone pairs on another water molecule to make H3O+

What is produced by the body to help neutralize acidic conditions?
A form of buffer

How does the hydronium ion form? What is its Formula?
H30+ explained above.

Why do most proteins need a constant pH?
Because if you change pH a few things can happen, it could cause the protein to denature, breaking various bonds. Also reactions that involves loss and addition of protons is strictly related to pH. I can go more into this but just look up Nernst equation.
