Gardening Question.

So i’ve been growing some green pepper and roma tomato plants for awhile. I haven’t really grown any vegetable plants for awhile. Anywho its been about 35-40 days. The little tags said it would take about 63 days to harvest. When I got the plants they were about 4 inches tall. Does anyone have any idea how old the plants were already? Or any idea when the vegetables will start forming? Their just starting to flower now.
