Trying to get a job with forgery on my record?

When I was 15 I got a job. My parents wouldn’t let me have access to my paychecks. They made me deposit the money into an account they controlled. I was then given an allowance out of that…
They were also very abusive so as soon as I turned 18 I fled. I had over $3k in work money that I assumed I could rightfully withdraw at 18 with the right proof. I was depending on that to survive. I discovered later I wasn’t allowed to touch that account until I was 22.
In extreme anger I demanded that my parents give me what’s rightfully mine and of course they refused unless i moved back in. (I was forced to do a lot of work for them as well so I’m assuming they didn’t want that to run away).
I was homeless, hungry, tired and desperate to get what was owed to me. I returned home and then the story changed to I would get $100 out of the 3k every couple weeks that i stayed. I freaked out and left again. Since I couldn’t get my money I grabbed some gift certificates for food off the counter and left. At least I could live in my car for a bit and feed myself..
I changed the name on the certificate to false names in hopes it wouldn’t be traced. In case my mom called in to see if it was used… Huge mistake. A month later after I finally get a place I get detectives knocking on my door and taking me to jail. Over $80 worth of food.
I told my story but regardless of how it went down they say the fact of me defrauding the signature puts me at a forgery charge.
They said after 7yrs it would fall off however. So I thought I’ll just battle the next 7yrs as best as I can.
Here I am 7yrs later and I find out I live in a state where to expunge is not an option.
I keep getting denied from jobs. Because of this I have worked at a crappy dead end job for 5yrs… been promoted many times and am now in management. I’ve about had it. I don’t have anything else on my record, I don’t get into trouble..
I feel like my life is now a lost cause.
I just received an interview for a very important job and I’m terrified at explaining all this because every place makes me and then denies me. I am so ****** stressed out about how to make them believe I’m not a thief.

Be honest with your story. Who could say no to that if they knew the true story? Can you bring “evidence” or information regarding the arrest so that your employer can see that you weren’t just making it up?
