What’s the title of this book?

I read it a very long time ago and would like to reread it. It was about a man who was in the middle of nowhere, and got drunk at a bar then fell asleep in the basement. when he woke up, he was in the past. i think it was somewhere in europe. He went on to teach this town better ways of doing things to defeat an invading army the man knew was coming. i remember in the beginning he had a hershey’s bar in his pocket and shared it with a family who helped him. please help! thank you!

no, thats not it :(. i vaguely remember something about two scientists watching the guy from the present time. it was some sort of time warp experiment thing gone wrong. he taught the villagers to count by 10’s, not 12’s, and a good method for washing wool, making watered steel, and baking bread.
