If you originally wrote the post that started the replies, just close the post so new replies are blocked. (Click the icon that looks like a padlock.)

Things are less convenient if you are bored with a conversation somebody else started. You won’t be able to close the post, so for the time being, just ignore the notices.

Personally, I’ve turned off any email notices (to do this, go to your “Settings” tab under the Account Admin page). I only review the “Notices” webpage. This way it is easy to identify and ignore updates to boring conversations.
